DESCRIPTION
A table and grating cheese were pressed in a cylindrical shape with flat sides and produced with cow’s milk. It takes its name from the city of Bra, the historical center of aging and trading of cheeses produced in the mountain pastures of Cuneo. The non-edible rind is hard and consistent, dark beige in color, the paste is consistent, with very small, barely visible and scattered, ochre-yellow, opaque, and browned eyes. Minimum aging of 180 days.
