DESCRIPTION

Semi-hard and pressed cheese. Its name derives from the contraction between Fontina and Emmental, from which obviously derive similar characteristics. It is made with cow’s milk, has a smooth, elastic, and thin crust, and the paste is compact and soft, white, or pale straw in color. Aging from 30 to 60 days.
