DESCRIPTION

Semi-hard and pressed cheese. Its name derives from a contraction between Fontina and Emmental, from which similar characteristics obviously derive. It is made with organic cow’s milk, aged for a minimum of 30-60 days, the wheels have a smooth, elastic, and thin rind, and the paste is compact.
