DESCRIPTION
A semi-fat, short or medium-mature cheese, with a semi-hard paste that takes its name from the Raschera Alp near Mount Mongioie in the municipality of Magliano Alpi (CN). It has a characteristic square shape, a thin, smooth, and soft rind, and a gray or reddish color, sometimes with yellow hues and reddish blooms. The white or ivory-white paste is firm and elastic with small, scattered, irregular holes. It is sweet to the palate, with lactic sensations, cooked butter, and toasted notes. Minimum aging of 30 days.
