DESCRIPTION
Pressed whole-milk table cheese, cylindrical in shape with flat sides and slightly convex sides. Inedible rind, light straw-colored or reddish-brown in color, depending on aging. The paste is moderately consistent and elastic, with small, diffuse, straw-white eyes. The taste is typical cheese with slightly acidic notes. Minimum aging 60 days.
